Blueberry Muffins (Muffin Tin)

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh or frozen blueberries
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 400°F (200°C). Line a muffin tin with paper liners or grease.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl. Toss in blueberries to coat.
  3. In another bowl, whisk eggs, buttermilk, melted butter, and vanilla.
  4. Fold wet ingredients into dry until just combined.
  5. Spoon batter into muffin cups, filling each about 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool in the tin for 5 minutes, then transfer to a wire rack.
