Ingredients:

2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups sugar
1 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
2 cups grated carrots
1/2 cup crushed pineapple, drained
1 cup chopped pecans or walnuts
Frosting: 8 oz cream cheese, 1/2 cup butter, 4 cups powdered sugar, 1 teaspoon vanilla

Carrot Cake (9x13 Baking Dish)

Instructions:

Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
Whisk together flour, baking powder, baking soda, cinnamon, and salt.
In another bowl, mix sugar, oil, eggs, and vanilla. Stir in carrots, pineapple, and nuts.
Combine wet and dry ingredients; pour into the baking dish.
Bake for 40-45 minutes or until a toothpick inserted comes out clean.
Cool completely before frosting. For frosting, beat cream cheese and butter until smooth, add sugar and vanilla, beat until fluffy.
